Carol Benson has been cooking for over fifty years and has never once written down a recipe. She believes this makes her food more authentic. Her family disagrees. She has not changed her approach.
Carol learned to cook from her grandmother, who also never wrote anything down. She has since cooked in forty-seven countries, at kitchen tables that ranged from a farmhouse in the south of France to a tiny restaurant in Mexico City that only opened on Thursdays. She remembers all of it. Not the measurements, but everything else.
She started Almost Recipes because she felt the internet had enough recipes. What it lacked, she believed, was the stories behind them — the grandmothers, the wrong turns, the meals that changed something. She has written every entry on this site herself. Her editor has asked, several times, whether she could include at least the ingredient list. She has declined.
