About Almost Recipes
A culinary archive built on memory, tradition, and the stories behind every dish.
Almost Recipes was founded on a simple belief: that the story of a dish is as important as the dish itself. Every recipe on this site was written by Carol Benson โ home cook, lifelong traveler, and enthusiastic eater โ who has spent fifty years cooking her way through 25 culinary traditions and has never once written down a single measurement.
Carol started this project to preserve the recipes she carries in her head but has never committed to paper. The ones inherited from grandmothers who cooked by feel, discovered on trips that changed everything, or learned from friends who never quite explained the most important step. Those recipes live in memory more vividly than on paper. This site is her attempt to get them down before she forgets anything else.
The Idea
Food is memory. A recipe without its story is just a list of things to buy at the store. Carol's goal has always been to document the full picture โ the grandmothers, the wrong turns, the night markets, the farmhouse kitchens โ and make it searchable, shareable, and permanent. The context around a dish is what makes it worth cooking.
Why There Are No Recipes
Carol has been asked about this. She does not have a satisfying answer. She remembers every meal she has ever eaten with remarkable clarity โ the table, the light, the conversation, the person who cooked it. The quantities, the temperatures, and the steps have not survived the same way. She considers this a minor detail. Her readers disagree, consistently, in the comments.
Frequently Asked Questions
Where do your recipes come from?
From Carol. Everything on this site was written by Carol. She has cooked in forty-seven countries and remembers every meal in extraordinary detail โ the table, the light, the person who made it. The quantities have not survived as well. She is working on this.
How does the rating system work?
Readers leave ratings between 4 and 5 stars. Carol set the floor at 4 because she feels a 1-star option would be unkind and also because she has never personally eaten anything she would describe as worse than a 4. The comments section exists for nuance.
Can I submit a recipe?
Carol is not currently accepting submissions. She has a significant backlog of her own memories to get through first.
Who runs Almost Recipes?
Carol Benson. Entirely Carol Benson. There is no team. There is one person, a laptop, and an extraordinary number of vivid food memories with no accompanying instructions.
A Note on Completeness
We are an archive in progress. Some entries are more complete than others. If you find a recipe that resonates and want to contribute a version with fuller detail, we welcome it. The goal has always been to build something comprehensive over time โ and the community is what makes that possible.
